W Verbier is a client favorite as a ski-in, ski-out resort, and also merits a visit during Verbier's beautiful summer, when there's hiking, mountain biking, and local festivals. Stay tuned for our review of the resort itself, but in the meantime, we're reviewing the ample breakfast offerings. At the time of our visit, the restaurant was called Bô ! but its current incarnation is Brasserie 1519, a reference to the W Verbier's elevation (1519 meters above sea level).

Brasserie 1519 Location and Hours
Brasserie 1519 is located on the lower level of the resort, below the street-level lobby. After passing by the Reception and Concierge desk, take the stairs down to reach the restaurant. It's open for breakfast from 7-11am daily; it also serves dinner nightly from 6:30-11pm.

W Verbier Breakfast Buffet and Made-to-Order Dishes
W Verbier guests enjoy complimentary breakfast, including a generous buffet, as well as made-to-order dishes and espresso drinks from a menu. We liked that in addition to juices on tap, there was an orange juicing machine for guests to make their own freshly-squeezed orange juice.

Cold buffet options include smoked salmon, smoked trout, sliced cheeses and cold cuts, as well as a salad bar:

I especially enjoyed the Tomme Vaudoise from the local cheese selection:

There were also fresh fruits (during our visit, they were grapefruit, pineapple, orange, cantaloupe and plum), yogurts, and chia seed pudding, as well as cereals and milk. There were also breads and pastries, but I found the a la carte selections more appealing than the bread and pastries.

Buffets are great for grazing, taking a little of everything that takes your fancy.

Hot breakfast items included scrambled eggs, boiled eggs, sausages, bacon, and even teriyaki chicken skewers.

Additional dishes can be made to order from the menu: egg dishes, porridge, coffee, tea, herbal infusions, and hot chocolate.

I especially liked the Valaisan Omelette, made with gruyere cheese, onion, and mushrooms, and topped with Valais dry-cured bacon:

The Avocado Toast was one of the prettier ones I've seen, with smooth avocado piped onto the bread, although my personal preference is for a chunkier fresh avocado mash.

My cappuccino was solid, although I found the hot chocolate a bit too sweet and not thick enough.

While not on the menu or on the buffet, I was able to ask for some fresh berries from the kitchen, which went perfectly with some plain yogurt, granola, and honey.

The Verdict
Breakfast was a highlight at the W Verbier, with fresh squeezed orange juice, excellent cold cuts and local cheeses, the hearty Valaisan omelette, and honeycomb. A slight weakness was the fresh fruit part of the buffet, which tended to run low and didn't have any fresh berries, but the kitchen was kind enough to provide some fresh berries when I requested them. The room can get a bit noisy when full, so in the summer, on nice mornings, I highly recommend sitting outside on the terrace for fresh air, tranquility, and lovely views.
