How Much Are Taxes for a Child's Ticket?
For flights from Newark EWR, taxes/fees for a child ticket were consistently ~$50. They were similar for a SFO to Copenhagen nonstop that I checked, but taxes/fees tend to be higher if you have connections.
Do These Fares Earn Miles?
Yes, but you'll want to be careful where you credit them; since United would only award you 50% of the distance flown for the least expensive economy tickets, you probably won't want to credit to United. Double check with your favorite Star Alliance airline to see how miles are earned with SAS. Aegean or Singapore KrisFlyer could be good choices.
How Many Kids Can Each Adult Take?
Apparently each adult can take up to 8 kids and just pay the taxes/fees for each kid, as long as they're all 11 years old or younger. That sounds like a nightmare to me, but then, I only have one kid to wrangle.
Where to Stay in Scandinavia
While there are plenty of (relatively) inexpensive guesthouses, B&Bs and hotels, Scandinavia only has a few true luxury options, and as you'd expect, these are pricey in peak season, due to the higher cost of labor and the demand for the relatively few beds. Prices are lower in the off season, but still, count on spending at least $500 for a nicer room at the Grand Hotel Stockholm or at the D'Angleterre or Nimb in Copenhagen.

Nimb, in Tivoli
The Danes are usually at or near the top in the “Happiest people on earth” surveys, and Tivoli, one of Europe's oldest amusement parks, is the perfect place to indulge your kids or your own inner child. Boutique hotel Nimb, also known for high quality breakfasts and dining, is located right in Tivoli and includes admission. Just note that weekends can be quite noisy in the park, so light sleepers should either stay during the week or bring industrial strength earplugs for weekend stays.

Hotel Continental
I wouldn't put the Hotel Continental in the same league as the Grand Hotel Stockholm, D'Angleterre and Nimb, but Oslo just isn't known for its luxury properties. I recommend reserving a higher category room, as many of the entry level category rooms are disappointing.
