In searching for a Paris souffle restaurant to replace our longtime favorite, La Cuisine de Philippe (sadly closed in 2023 and replaced by Aux Perchés), we came across Auberge Bressane. This is our review from a recent visit.
Auberge Bressane Location and Hours
Auberge Bressane is located at 16 Av. de la Motte-Picquet, in the upscale 7th arrondissement of Paris. It's closest to the La Tour-Maubourg Metro Station (Line 8) and a short walk to the Musée Rodin, a ~17 minute walk to the Eiffel Tower, and a ~22 minute walk from the Musée d'Orsay. We were staying that evening at J.K. Place Paris, less than a 20 minute walk away.
It's open for dinner nightly from 7:30-10:15pm, and for lunch 12-2:30pm every day except Saturday. Reservations are recommended, since by the time we left, the restaurant was completely full.

Auberge Bressane Menu and Food
Auberge Bressane has a medieval-styled interior and focuses on traditional French cuisine: escargots, frog's legs, terrine, foie gras, coq au vin, and sweetbreads are all on the menu, in addition to cheese souffle.

My husband and I decided to share the cheese soufflé (using Comté cheese), as well as the Chicken in Morel Mushroom Cream Sauce.
To start off, we were brought French baguette with Isigny butter, as well as an amuse-bouche of cheese toasts, which were excellent.

The Comté cheese soufflé was perfectly puffy, with a nice cheese crust, although I wished for a more pronounced cheese flavor in the interior.

The Chicken in Morel Mushroom Cream Sauce was a bit of a disappointment. The sauce itself was delicious, but for a EUR 39 dish, it should have had a few more morel mushrooms. And chicken breast was the wrong cut for this dish; chicken thighs would have been far better, since the white meat of the breast was too dry and thighs would have been juicier.

I'd asked to substitute a side salad in lieu of fries, and that was a good counterpoint to the richness of the souffle and cream sauce.

For dessert, we shared a trio of mini souffles: chocolate, Grand Marnier, and caramel. Our server poured a bit of Grand Marnier into the Grand Marnier souffle, and a caramel sauce into the caramel souffle, but there wasn't any chocolate sauce for the chocolate souffle.

I'd expected to like the chocolate souffle the best, but I liked it least, because the chocolate flavor was muted; as with the cheese souffle, I thought there wasn't enough flavor. I've made dark chocolate souffles at home that I like far better. Instead, my favorite was the salted caramel souffle, especially with the generous pour of salted butter caramel.

The Verdict
We liked but didn't love Auberge Bressane. The souffles were wonderfully airy, nothing wrong with the texture, but I was hoping for greater depth of flavor for both the cheese souffle we shared as a main, and a far more chocolatey chocolate souffle for dessert. Because of this, my favorite dessert souffle was the salted caramel, where the caramel sauce augmented the light caramel of the souffle itself. We also wish that the American family with the screaming kid had been more considerate and left or at least taken the kid outside. Of course, the last isn't the restaurant's fault, but somehow I expected a French restaurant to take a stricter stance when it came to a disruptive child.
