Review: DUO Restaurant at Four Seasons Maui at Wailea

This Review of DUO Steak & Seafood at the Four Seasons Maui at Wailea is from our 2021 site inspection stay. DUO is also where the resort's breakfast buffet is served.

DUO Restaurant Location and Hours

DUO Steak & Seafood is located on the ground level near the main pool of the Four Seasons Maui at Wailea, which is at 3900 Wailea Alanui Drive, about a 30 minute drive from Kahului Airport. DUO serves breakfast from 6-11am daily, making it perfect for both early risers and guests who prefer to sleep in. Dinner is served nightly 5:30-9pm. Ever since Hawaii reopened to visitors, we've been recommending that guests make all dinner reservations well in advance of their stay, ideally around the time they make their room reservations. Hawaii is extremely popular, and if you don't reserve restaurants in advance, you could be stuck with very inconvenient dining times or room service.

DUO Restaurant Dinner Menu and Food

We reserved DUO for an early 6pm dinner, requesting patio seating. The restaurant is open air, although some seating is more interior, whereas the patio seating is closer to the pool area and outdoors, with umbrellas.

Our server offered us the regular menu, as well as a special 3-course prix fixe menu and a menu for kids and teens.

Our son tried a hibiscus mocktail that was wonderfully refreshing, made with hibiscus, guava juice and lemon, with an edible candied flower garnish.

I opted for the 3 course prix fixe, starting with the Roasted Carrot and Almond Soup. It sounded basic, but was anything but, and burst with flavor, with basil oil in addition to the lime crema. I had to keep wrestling the soup back from my husband and son, who wanted more tastes.

All of our main courses were fantastic. My husband was very pleased with his Fisherman's Catch of mahi mahi in yellow coconut curry broth with hamakua mushrooms and Thai basil:

Our son got a cheeseburger from the Teen menu, which looked full size to us, filled him up, and was a good deal at $14.

From the prix fixe, I chose the Braised Beef Short Ribs with a Smoked Chestnut Crust, Herb Spaetzle, and Brussels Sprouts. This was the star of the dinner, and while not on the regular menu, I'd suggest asking in advance if the kitchen could make it, if you enjoy short ribs–it was that good. It was a generous serving of meat, and perhaps the only modification I'd have liked would have been more of the delicious spaetzle to go with the meat and madeira jus.

For veggies, we ordered a side of Crispy Brussels Sprouts, which our server recommended. Wonderfully sweet and smoky, thanks to maple syrup and balsamic double smoked bacon, the crumbled goat cheese added just the right fresh, piquant touch.

My 3 course menu included a dessert, a Dark Chocolate & Kona Coffee Bar. This was the only disappointment, not so much the taste–it was perfectly fine, if not memorable–but the fact that it took so long for it to be brought to our table. We very nearly gave up on it. Everything until that point had been paced well, but the long wait did dampen our experience of what was otherwise an excellent dinner.

The Verdict

I had modest expectations of DUO for dinner, perhaps because I mainly associated the restaurant with the daily breakfast buffet, which while very satisfying, isn't fancy. But our dinner experience was nearly flawless, with dishes that impressed on multiple levels: presentation, sophisticated balancing of flavors and textures, and international influences. And for those who are just looking for comfort food, it delivers there as well–our son raved about his teen cheeseburger. The only thing that slightly let us down was the very protracted wait for our dessert, which was included as part of the three course menu. Otherwise, a superb dinner at Four Seasons Maui at Wailea.
