JetBlue Mint A321 Cabin and Seats
JetBlue Mint on the A321 has 12 flat bed seats in 5 alternating rows: 2-2, 1-1, 2-2, etc. We reserved roughly 2 months in advance, and were able to select two of the enclosed suites, 2A and 2F. There are four enclosed suites, 2A/2F and 4A/4F, and since they're free to select if available, it pays to reserve early to nab one of them.

The suite seats are 22 inches wide, and extend to a total bed length of 80 inches, helpful for taller passengers. In addition to the closing suite door, there's more room around the suite seats, which I find very helpful in-flight (note that you'll need to store all carry-on luggage in the overhead compartments during take-off and landing).
I worked and didn't have occasion to use the bed on this daytime flight, but the seat controls easily recline the seat to a more comfortable lounge chair position and into a fully flat bed.

The suite door of course isn't very high, but it does provide a slight measure of privacy from the aisle.

Bedding is by Tuft & Needle, with a blanket and memory foam pillow, although since there's no mattress pad and the cabin was very warm, if I had lain down, I would have used it beneath me as a mattress pad.

In addition to the bedding on each seat, there was a bottle of water tucked in a small cubby by the reading light.

The JetBlue Mint amenity kit came in a Caraa pouch, with ankle socks, ear plugs, mouth wash, and Dr. Dennis Gross ultra-rich Hyaluronic Marine Moisture Cushion and Hydrate + Smooth Hand Treatment, as well as lip balm. Disappointingly, the velcro straps on the sleep mask didn't go around my head (or my teen's) comfortably; they were simply too short.

The headphones get the job done, but those with Bose headphones will want to bring their own.

JetBlue Mint A321 Food and Service
Previously, JetBlue Mint used to offer a RefreshMint minty lemonade; unfortunately JetBlue no longer does. That said, the crew was willing to provide a pre-flight drink, so my teen and I both chose orange juice, which was very good and pulpy.

Since our flight departed just before 5pm, the menu featured savory small plates, one cold, three hot. For passengers with food allergies, on request, the crew is able to show the heating and plating instructions, which include the ingredients list. Previously, JetBlue's menu used to feature five items to choose from. With this menu, vegetarians only had two items they could eat. While I'm not vegetarian, it would have been so easy to either omit or make optional the ‘nduja for the Sicilian Square, so that it could have been accessible to vegetarians.

I started with a glass of Sauvignon Blanc (the Via Alpina Giulietta from Friuli) that was refreshing and crisp; this was accompanied by some Italian Taralli (crackers) that were fine, although I'd have preferred some Marcona almonds or similar.

I have to hand it to JetBlue for, notwithstanding the reduction in small plate choices, continuing to have some of the best domestic business class catering. It's not that it's fancy, but it manages to be tasty and satisfying, which is more than can be said for some other U.S. domestic business class catering these days. It may not win any style points, with two of the dishes liberally sprinkled with parmesan, but it was all delicious.

I was especially happy with the Chicken Piccata, since the capers and fresh lemon that I squeezed over it really amped up the flavor.

I also liked the creamy burrata that accompanied the Sicilian Slice.

The vanilla gelato with roasted apples and caramel crumble and full-bodied mint tea from Portland's Smith Teamaker were definitely a step up from the cloyingly sweet sundaes I've had on other domestic carriers.

The Verdict
A key reason we prefer flying JetBlue Mint for transcontinental flights is that, if we reserve early enough, we're able to select a suite. It's not so much the closing suite doors that we care about, but the extra space around the seat, which is handy for a laptop and carry-on bag during the flight, so that we don't have to juggle where to put a laptop during the meal. And, while JetBlue no longer serves a special pre-flight drink, we liked our orange juice and the hot small plates as well as dessert were done very well. We do wish that the WiFi was faster and more reliable and that the cabin wasn't kept so warm, but overall, it was a very good flight.
