Today we had beautiful, warm, summery weather in NYC and decided to meet up with some friends at a local playground. Since we were meeting up around noon, I decided to bring some quiche to share. This Bacon Spinach Quiche is a great way to include spinach in a food that many kids will actually eat, at least if they enjoy cheese, omlettes, etc. The quiche far from low-fat, but it really does taste best with the creme fraiche, whole eggs, bacon, etc. Live a little!
Shopping List, Quiche
- 1 1/2 cups Trader Joe's white whole wheat flour
- 1 cup Trader Joe's almond meal
- 1/2 cup Trader Joe's Presidents Reserve olive oil
- 1 1/4 cup grated Cave Aged Gruyere (this is probably the most critical ingredient; try to get either this cheese from Trader Joe's or another gruyere that is cave aged at least 12 months)
- 1/4 cup Trader Joe's shredded parmesan
- 1 8 oz. tub of creme fraiche
- 6 Trader Joe's cage free eggs
- Pinch Trader Joe's ground nutmeg
- 1/3 cup Trader Joe's organic half and half
- 1 1/2 cup Trader Joe's frozen organic chopped spinach
- 4 strips of Niman Ranch applewood smoked uncured bacon, cubed in small pieces, cooked in a skillet until crispy, drained on a paper towel (bought at Whole Foods)
- Preheat oven to 350 degrees.
- Mix 1 cup almond meal and 1 1/2 cups whole wheat flour in a bowl with a pinch of salt. Pour in 1/2 cup olive oil and with a fork, mix well until crumbs form. Pat into pie plate.
- Prick crust all over with fork and pre-bake in preheated oven for 10 minutes. Remove from oven and turn oven temperature to 375.
- Meanwhile, while crust bakes, in separate bowl whisk 6 eggs with entire tub of creme fraiche, a pinch of ground nutmeg, pinch of salt, and freshly ground black pepper to taste. Mixture should be quite smooth. Stir in 1/3 cup half and half.
- Defrost 1 1/2 cups frozen organic spinach in microwave (about 1 minute) and add to filling mixture
- In separate bowl, mix 1 1/4 cups grated Gruyere with 1/4 cup shredded Parmesan; add all but 1/4 cup to filling mixture
- Scatter cooked bacon pieces over crust, then pour filling mixture over. Lightly sprinkle a bit more ground nutmeg over top, then scatter reserved grated cheese over top.
- Bake for 35-40 minutes or until filling is just set in center.
