Can I Earn the Bonus If I've Previously Had the AMEX Business Platinum?
 
Yes; AMEX personal and business cards are different products, so if you've only had the AMEX Business Platinum and never the personal AMEX Platinum, you can earn the signup bonus.
 
 
How Much Are 75,000 AMEX Membership Rewards points worth?
 
While everyone values their miles and points a bit differently, a good rule of thumb for AMEX Membership Rewards points and Chase Ultimate Rewards points is a value of 2 cents per point. Since there are 2% cash back cards, and cards such as the Chase Freedom that earn 5% cash back or 5X on quarterly bonus categories, you generally don't want to redeem Memberhip Rewards points at anything less than 2 cents per point, and ideally you'll want to redeem at higher valuations.

Officially no–it can only be used for incidental expenses such as bag fees, club lounge access when billed by the airline, and onboard food purchases when billed by the airline and similar, but not ticket or upgrade purchases.   • Earn 75,000 Membership Rewards points after you spend $10,000 in purchases on the card within your first 3 months of card membership
  • Earn 3X for purchase in one category of your choice and 2X for the remaining 4 categories:
  1. Airfare purchased directly with commercial airlines

Analysis
 
If you've been reluctant to pull the trigger on the 100K AMEX Business Platinum offer that ends tomorrow, because of the high spend required ($15,000) to earn the full 100K bonus, or because of the $450 annual fee that is not waived, one of these offers may be a good alternative to consider.
 
The 75K AMEX Platinum still has the $450 annual fee, but the required spend is just $5000 to earn the 75K bonus. Meanwhile, the 75K Business Rewards Gold card has $10,000 minimum spend, but no annual fee the first year.
 
For most people, the choice will be easy: whichever card you haven't already had, since you can only earn a signup bonus for a given AMEX card once for that card. So even if you had an AMEX Platinum many years ago, you wouldn't be eligible for a new signup bonus.
